Usually, when you think about a dish that is known all over the world that dish will come with a backstory involving centuries of history.Talk to an Italian, Chinese, or Indian chef and you will usually be able to learn a great deal about the history of a country through the learning the history of its cuisine.

Butter Chicken does not come with hundreds of years of history but it does have an interesting backstory all its own. This famous, delicious, and beloved Indian dish was invented, quite by necessity, in a humble independently owned restaurant in India in the 1950’s.

Believe it or not, many years before he invented Butter Chicken, a young chef named Kundan Lal Gujral, at the time living in Pakistan, invented Tandoori Chicken after experimenting with placing yogurt marinated chicken into a tandoor oven.

After the partition of India, Mr. Gurjal was forced to flee Pakistan for Delhi India where he opened his own restaurant called Moti Mahal Delux. Apparently, after suffering problems with refrigeration at his new restaurant, Chef Gurjal hypothesized that a butter and cream curry tomato sauce might soften his leftover chicken.
The result of both experiments ended up making culinary history, a dish so famous you can order it in Canada, Great Britain, the United States, and virtually anywhere else you travel.

Butter Chicken was a favorite of world leaders like Nehru and of U.S. Presidents Nixon and Kennedy. So, at Palki, we take our Butter Chicken very seriously. We slowly marinate the chicken in a cream, yogurt and spice mixture before cooking the chicken in a tandoor and finally simmering it in a buttery mild tomato curry sauce.until perfectly tender.

We would share more about our Murgh Makhani (the Hindi name for Butter Chicken) but we have to keep the special spice mixtures in our marinade and curry mix for our butter chicken secret.

Vancouver is one of Canada’s largest international cultural and culinary crossroads and Palki is proud to be home to some of Vancouver’s best Indian food. Great Indian dishes always start with a love for cooking great food and we want every Palki customer to experience the love that we put into our food every time they visit our restaurant. We offer a wide variety of Indian regional favorites and family recipes which are all available for dine-in, takeout, or delivery.
